JAMBALAYA 
2 minced garlic cloves
1 onion, chopped
4 tbsp. butter
3 chopped tomatoes
2 tsp. flour
1/2 tsp. thyme
1/8 tsp. cayenne
2 bay leaves
1/8 tsp. ground cloves
1/2 c. water
1 c. cooked, cubed chicken
1 c. cooked, cubed ham
1/2 lb. cooked shrimp (1 c.)
3 c. cooked rice

Saute garlic and butter, add tomatoes and flour. Stir over medium heat for 3 minutes. Stir in thyme, cayenne, bay leaves and cloves. Add water. Cook for another 3 minutes. Reduce heat and stir in chicken, ham and shrimp. Add salt and pepper to taste, add rice, cover and simmer for 30 minutes. Stir occasionally to prevent sticking. Serves 4.
