LIME GELATIN SALAD 
1 (6 oz.) pkg. lime gelatin
2 c. boiling water
1/2 c. cold water
1 c. sm. curd cottage cheese
1 c. finely chopped celery
1 (20 oz.) can crushed pineapple, undrained
1/2 c. nuts (optional)
Lettuce leaves

Dissolve gelatin in boiling water. When all the gelatin is dissolved, add the cold water and mix well. Refrigerate the gelatin about 30 minutes until slightly thickened. Set a timer so you don't forget it!

When gelatin is slightly thickened, add remaining ingredients except the lettuce leaves. Mix well. Pour into 9-inch square pan. Refrigerate until firm, 3-4 hours. Cut into squares and serve on bed of lettuce leaves. Serves 9.
