ZUCCHINI CASSEROLE | |
5 or 6 sm. to med. zucchini squash, shredded 1 lg. onion, chopped 3 eggs, beaten 12 saltine crackers, crushed 2 tbsp. corn oil butter 1/4 - 1/2 tsp. McCormick's Seafood Seasoning 1/2 - 1 c. shredded cheddar cheese Place zucchini in large covered saucepan with butter and chopped onion. Saute over medium to low heat until onion is transparent, about 8 minutes. Add beaten eggs, cook, stirring for 3 to 4 minutes, then add cracker crumbs, seafood seasoning, salt and black pepper to taste. Mix well. Pour into 2 quart baking dish. Top with grated cheese. Bake 15 to 25 minutes at 350 degrees. Serve. |
