ZUCCHINI BREAD II | |
2 c. flour 2 tsp. baking soda 1/4 tsp. baking powder 1 tsp. salt 1 tsp. cinnamon 1 1/2 c. sugar 1 c. vegetable oil 3 eggs 2 tsp. vanilla 3 c. grated zucchini 1 c. chopped walnuts 1 c. raisins Mix flour, soda, powder, salt and cinnamon together. Then mix sugar and oil; beat in eggs, vanilla, and zucchini. Stir in walnuts and raisins. Fold in the flour mixture and pour batter into 2 greased and floured 9x5 inch loaf pans. Bake in a preheated 350 degree oven for 1 hour. Cool in pans on rack for 10 minutes, then remove from pans to cool completely. Makes 2 loaves. |
