MOIST ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. brown sugar
3 c. grated zucchini
3 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
3 tsp. cinnamon
1/2 tsp. nutmeg
1/2 c. chopped nuts (optional)

Beat eggs until light and fluffy. Add oil, sugar, vanilla; mix. Add flour, salt, soda, powder and cinnamon; mix. Add zucchini and mix until well blended. Add nuts. Grease 2 small loaf pans. Bake at 325 degrees for 1 hour.
