HONEY CAKE 
1 tsp. nutmeg
1 tsp. allspice
1 tsp. cinnamon
1 tsp. cloves
2 tsp. cocoa powder
3 c. flour
1 tsp. baking soda
1/4 tsp. salt
1/2 c. white raisins
3 eggs
1 1/2 c. sugar
1 c. honey
3/4 c. oil
1/2 c. broken walnuts
Boiling water

In a Pyrex measuring cup put in 1 heaping teaspoon each of nutmeg, allspice, cinnamon, and cloves. Add cocoa and enough boiling water to make just over a full cup. Set aside. Sift flour, baking soda, and salt. Beat eggs in mixer. Add sugar, honey, and oil and beat well. Add spice mixture to egg batter alternately with flour mixture. Put in greased tube pan or 2 loaf pans. Top with raisins and nuts which have been slightly covered with flour. Cover these lightly with some of the batter and bake at 325 degrees for 1 hour or more until cake tests done.

When baking for the Jewish New Year, a honey cake is a must.
