HONEY OAT BRAN MUFFINS 
1 3/4 c. all-purpose flour
1 tbsp. baking powder
1/4 tsp. salt (optional)
1 1/2 c. skim milk
1/2 c. honey
2 egg whites
3 tbsp. vegetable oil
3 c. Kellogg's Common Sense Oat Bran Flakes cereal

Stir together flour, baking powder and salt; set aside. In large mixing bowl beat together milk, honey, egg whites, and oil until thoroughly mixed. Add dry ingredients and oat bran flakes cereal, stirring only until combined. Pour batter into 12 greased 2 1/2 inch muffin pan cups. Bake in 400 degree oven for about 25 minutes or until lightly browned. Serve warm.

Variations:

1 teaspoon cinnamon in place of salt

Whole milk vs. skim

Whole eggs vs. whites

ANY bran flakes vs. Kellogg's "specified"

Bake for 25 minutes at 350 degrees (keep an eye on the muffins)

1 cup cranberries (halved) and 1 cup coarsely chopped walnuts
