HI PRO SALAD 
1 pkg. fresh spinach (10 to 16 oz.), wash well and dry, tear up to bite size
1 c. fresh mushrooms, sliced
2 med. tomatoes, cut up (or 1 c. halved cherry tomatoes)
1 c. sliced celery
1 pkg. fresh bean sprouts (or 1 can bean sprouts, drained)
1 c. shredded Cheddar cheese
1/4 tsp. garlic salt
Pepper, if desired

DRESSING:

1/3 to 1/2 c. vinegar
1/3 c. oil
1/3 c. sugar
Salt and pepper to taste

Combine all ingredients in large bowl. Mix dressing. Toss with salad just before serving.
