ARROZ CALDO WITH CHICKEN 
1 c. rice
1 sm. chicken
1 inch cube ginger
2 segments garlic, crushed
1 sm. onion, chopped
2 stalks green onion
2 tbsp. lard
2 tbsp. patis (fish sauce)
6 c. water

Cut chicken into desired pieces. Pare and slice ginger into thin pieces. Saute the garlic, ginger and onion. Add the chicken and season with the patis. Cover allow to simmer a few minutes. Add the rice and water stirring all ingredients together. Cook over low heat for 20 minutes or until chicken and rice are cooked. Add chopped green onions before serving.
