ORANGE AVOCADO SALAD WITH
MOLASSES DRESSING
 
1/2 c. vegetable oil
5 tbsp. lime or lemon juice
2 tbsp. molasses
1 tsp. dry mustard
4 heads Bibb lettuce
1 avocado
4 navel oranges
1 med. sized red onion

Prepare dressing: combine first 4 ingredients in a jar with tight fitting lid. Shake well. Store in refrigerator until ready to use.

Arrange Bibb lettuce on large platter. Fan avocado slices on left and right sides. Arrange orange slices in center. Top with rings of red onion. Drizzle with dressing. Serves 8.
