VEAL PARMIGIANA 
4 slices veal scaloppini
Oil
Bread crumbs
1 beaten egg
1 can tomato sauce
4 slices Mozzarella cheese

Dip veal into beaten egg and soak with bread crumbs. Heat oil in skillet, add veal and brown. Cover each slice of veal with tomato sauce. Cover pan and cook on low for 45 minutes. Add cheese to veal, cover and cook 15 more minutes. Serves 2.
