VEAL PARMIGIANA 
1 1/2 lb. veal steak
3 tbsp. oil
1 chopped onion
1 can tomatoes
1 1/4 tsp. salt
1/4 tsp. pepper
1 (8 oz.) can tomato sauce
1 egg
1/4 c. bread crumbs
1/4 c. Parmesan cheese
3 tbsp. oil
1/2 lb. Mozzarella cheese
1/3 c. Parmesan cheese

Cut veal into individual size pieces. Saute onions in 3 tbsp. oil. Add tomatoes, salt and pepper. Simmer uncovered for 10 minutes. Add tomato sauce, simmer uncovered for 20 minutes.

Beat egg. Combine bread crumbs and 1/4 cup Parmesan. Dip veal in egg, then crumbs. Saute veal in oil until brown on both sides. Set in rectangular baking dish. Pour 2/3 tomato mixture over veal. Arrange mozzarella cheese over sauce. Spoon rest of tomato mixture over cheese. Sprinkle with 1/3 cup Parmesan and any leftover bread crumbs. Bake in 350 degree oven for 1 1/2 hours.
