VEAL PARMIGIANA 
1 lb. thin veal cutlets, about 6 pieces
1 egg, slightly beaten
1 c. butter
3/4 c. seasoned fine dry bread crumbs
1 (14 to 16 oz.) jar meatless spaghetti sauce
1 (8 oz.) pkg. Mozzarella cheese, sliced or grated
Grated Parmesan cheese

Heat oven to 450 degrees. Dip veal first in egg then coat well with bread crumbs. Heat butter in skillet over moderate low heat. Add veal and increase heat to moderate. Cook veal until well brown on bottom. Pour layer of spaghetti sauce into bottom of shallow rectangular 2-quart baking dish. Arrange veal in single layer over sauce. Place Mozzarella cheese over veal and top with remaining sauce. Sprinkle generously with Parmesan cheese. Bake 30 minutes. Serve with additional grated cheese, if desired.
