SALMON PATTIES 
1 can pink salmon
1 large egg
1 1/2 tablespoons dried minced onions
3/4 to 1 cup bread crumbs/cracker crumbs
1 tablespoon lemon juice
1 teaspoon seafood seasoning
1 teaspoon dried parsley
1/2 cup sour cream
1/2 teaspoons coarsely ground black pepper
3 shakes Tabasco hot sauce
corn meal (for coating)
canola oil (for frying)

Mix all ingredients together well (I like to just use my hands, that way you can mix the ingredients very well.) Shape into medium-sized patties. Dip each pattie into corn meal and shake off.

Pour about 2 inches of the canola oil into a large skillet. Heat the oil, turn down to around medium heat. Don't let it get too hot. Place the patties into hot oil and fry until brown on each side. Drain on paper towels.

Makes around 8 large patties or 12 small patties.

These are wonderful!! They are even better the next day right out of the fridge (I honestly like them better cold!)
