FRUIT CASSEROLE (Pizza) 
1/2 c. butter
1/2 c. sugar
1 egg
1 tsp. vanilla
1 tbsp. oil
1 1/2 c. flour
1/2 tsp. cream of tartar
1/2 tsp. baking soda

Cream butter and sugar. Add other ingredients (except flour) one at a time. Mix well. Stir in flour, forming a ball. Cover with plastic wrap and refrigerate. Spread out on a greased pizza pan to the edge. Bake 15 minutes on 350 degrees. Cool.

SPREAD:

Blend: 8 oz. Cool Whip 1/4 c. powdered sugar

Spread over cooled cookie mixture. Arrange fruit (grapes, kiwi, bananas, strawberries, blueberries, peaches, etc.).

TOPPING:

1 c. sugar
3 tbsp. cornstarch
1 c. orange juice
1 tbsp. lemon juice
1/2 c. water

Mix and boil one minute. Cool. Spoon over top of fruit.

Made this for a small gathering and everyone loved it, including me! Used a 9x13 baking dish instead of a pizza pan to bake the dough, and then layered everything on top. I wasn't sure at first when to put it together, fearing the fruit would start to brown, but it wasn't a problem because of the lemon juice in the topping. Made it ahead of time, refrigerated, and took it out to come to room temperature while we sat down to dinner. This dish is divine!
