CREAMY ZUCCHINI SOUP 
1 1/2 c. beef stock
2 c. water, boiling
3 c. zucchini, peeled & sliced
1/2 c. onion, chopped
Garlic powder to taste
3 c. milk

Cook all ingredients, except milk until zucchini is tender. Strain soup and save liquid. Puree mixture in blender. Add to liquid. Heat but do not boil. Add milk. Stir until smooth. Can be frozen for later use.
