LADY MEATBALLS 
1/2 c. cooked brown rice
1 lb. lean ground turkey
1/2 c. grated onion
1/4 c. chopped fresh parsley
1 tbsp. Parmesan cheese
2 egg whites, beaten
1/4 c. chopped fresh dill (or 2 tsp. dried dill)
1/4 tsp. black pepper
1/2 c. all purpose flour
1 tbsp. extra virgin olive oil

In a bowl, combine rice, meat, onion, parsley, cheese, egg whites, dill and pepper. Knead well and form into 20 egg shaped ovals. Roll ovals in flour.

In a large no stick skillet, heat olive oil over medium heat and saute ovals for about 5 minutes until brown on one side. Turn carefully and saute other side for 3 minutes or until brown. Remove and drain on paper towels.

Keep in a covered casserole in a warm oven until ready to serve. If refrigerating to serve later. Reheat in a covered casserole in a 325 degree oven for 20 minutes until warmed through. Serves 5.
