POTATO - ZUCCHINI COOKIES 
1/2 c. butter
1/2 c. sugar
1 egg
1 1/2 c. flour
1 tsp. cinnamon
1/2 tsp. allspice
1 3/4 c. instant potatoes
1/2 c. nuts
1 c. diced zucchini
1/4 c. milk

Cream sugar, butter and egg. Add dry ingredients alternately with milk. Add zucchini and nuts. Drop by rounded teaspoons on lightly greased cookie sheet. Bake at 350 degrees until browned, 12 to 15 minutes.
