NORM'S SPINACH SALAD 
1 bunch fresh spinach
3 strips bacon, diced into 1/2-inch pieces
Generous grating of black pepper
1 green onion, cut tops into 1/2-inch pieces
2 tbsp. brown sugar
1/2 tsp. dry mustard
1/2 tsp. cayenne (red) pepper
1 tbsp. brandy

Wash, clean and dry spinach; break medium pieces into salad bowl. Sprinkle on black pepper.

Fry bacon pieces in skillet on medium-high heat until lightly cooked; lower temperature to medium and add green onion. Cook 2 minutes and stir in brown sugar.

Place brandy in a ladle over another burner on high, wait 30 seconds and ignite brandy with a match. Slowly pour burning brandy over bacon mixture. Stir. After flames die, add mustard and cayenne. Stir well. Remove from heat and pour over spinach. Toss well. Place skillet upside down on top of salad bowl for 1 minute to slightly wilt the spinach. Serve.
