CHICKEN CORDON BLEU 
4 chicken breasts
4 oz. Swiss cheese
4 thin slices boiled ham
2 tbsp. butter
Salt
Pepper
3 tbsp. flour, approximately
1/2 c. milk
Grated Swiss cheese

Debone chicken and/or purchase boneless chicken breasts. Pound chicken with meat tenderizer in order to flatten to thin patty. Lay thin slice of ham on chicken; roll into chicken thin slices of Swiss cheese until you have made a meat, chicken and cheese roll. With toothpicks ensure that the roll will not come apart. Place in baking dish in oven set at 375 degrees for approximately 45 minutes.

While chicken is cooking, make a medium white sauce by melting butter, lightly seasoning with salt and pepper. Mix in flour to thicken to a paste and pour in 1/2 cup milk. Allow to thicken to medium consistency. Stir in grated Swiss cheese until sauce has a distinct cheese flavor. When chicken is cooked, place on plate and pour sauce over chicken roll. Serves 4.
