SLIM CHICKEN CORDON BLEU 
1 1/4 lb. veal or chicken cutlets
3 oz. Swiss cheese, thin sliced
3 oz. lean boiled ham
Fresh parsley, chopped
2 tbsp. salad oil
5 tbsp. seasoned bread crumbs

Divide cutlets into 6 equal pieces; pound thin with a mallet. Top each piece with a thin slice of cheese and a slice of ham. Sprinkle with parsley, then roll with ham and cheese inside. Dip each roll first in oil then in bread crumbs, coat lightly. Place on a non-stick baking sheet. Bake in preheated 400 degree oven 10 to 12 minutes or until brown. Serve with wine sauce. 271 calories with veal; 238 calories with chicken or turkey.

WINE SAUCE: Combine 1 (13 oz.) can evaporated skim milk with 2 tablespoons cornstarch. Put in a heavy saucepan; cook, stirring, over a moderately low heat until thick. Thin to gravy consistency with boiling water, then stir in some fresh parsley.
