BUTTERED PEAS WITH HAM 
2 1/4 qt. boiling water
2 tsp. salt
6 c. green peas
2 1/4 c. melted butter
3/4 c. minced Granny Smith apples
1/2 c. diced ham
1 c. minced onion
3/4 c. sliced mushrooms
1 tsp. grated coriander
1 tsp. cinnamon
1 tsp. sugar
1/2 tsp. white pepper
1/2 tsp. salt

Boil water with salt. Add peas; cook 4-5 minutes. Immediately drain and place in cold water. In large fry pan melt butter over medium high heat. When hot add apples, ham, onion, and mushrooms and saute until tender. Add seasonings; mix well. Add peas. Reheat until hot. Adjust seasonings to taste.
