DONNA'S ENCHILADAS 
3 c. grated longhorn cheese
2 lg. chopped onions
1 tsp. salt
4 lbs. hamburger
4-6 chopped jalapeno peppers
1 jar pimiento
1 lb. Velveeta cheese
1 stick butter
6 tbsp. flour
3 dozen corn tortillas
1 sm. can green chilies
4 c. milk

Brown hamburger and onions and drain and set aside. In small saucepan melt butter; add flour and blend. Add salt and milk. Cook until smooth. Add Velveeta cheese in chunks and cook until it melts. Add pimiento and peppers and chilies. Drop tortillas in hot grease (just until soft, then drain on paper towel). Put hamburger and onion mixture and grated cheese in each tortilla and roll up. Place in large, greased pan. Pour cheese sauce over tortillas and bake for 30 minutes at 350 degrees.
