APRICOT WALNUT BARS | |
3/4 c. dried apricots, cut up 1/4 c. sugar 1 c. flour 1/2 c. butter 1 c. brown sugar 1/2 tsp. baking powder 1/4 tsp. salt 1/2 tsp. vanilla 1/2 c. walnuts, chopped 2 beaten eggs Simmer apricots 10 minutes; drain and cool. Sift together flour, sugar, and cut in butter. Pack in 9 x 9 pan. Bake at 325 degrees for 25 minutes. Meanwhile, combine eggs and brown sugar; stir in 1/3 cup flour, baking powder, and salt. Add vanilla, nuts, and apricots. Spread over baked layer and bake 35 minutes. |
