ZUCCHINI STUFFING CASSEROLE 
2 lbs. zucchini
1 onion, chopped
1 green pepper, chopped
1 lg. carrot, grated
1 pkg. Pepperidge Farm stuffing
1 stick butter
1/2 pt. sour cream
1 can cream of chicken soup

Cook zucchini and onion in small amount of butter. Melt stick of butter and mix with stuffing. Mix all ingredients together and put in buttered baking dish. Cover with bread crumbs so it's well covered. Bake at 350 degrees for 35 minutes.
