SAUSAGE JAMBALAYA 
1 lb. sausage
onions
peppers
2 garlic cloves, minced
2 1/4 c. chicken broth
1 c. converted rice
1 can diced tomatoes, drained
1 tsp. Cajun seasoning

Sauté sausage, onions, peppers and garlic. Combine with remaining ingredients. Bring to a boil. Reduce heat; stir, cover and simmer for 25 minutes.
