SUPER TACO SALAD 
1 lb. can tomatoes with liquid
1/4 tsp. salt
3/4 tsp. dry mustard
1 1/4 tsp. chili powder
1 sm. clove garlic, minced
3/4 lb. cooked chicken breast, cubed
1 lb. can kidney beans with liquid
1/2 head lettuce, chopped
2 c. lo-fat cheddar or Mozzarella cheese, grated
Tortilla chips
Salsa
Non-fat yogurt

Combine tomatoes, salt, mustard, chili powder and garlic, heat to boil; simmer 5 minutes. Add chicken; simmer 5 more minutes, add beans and heat through. Spoon into bowls and top with remaining ingredients as desired.
