SQUASH PARMESAN 
3 sm. yellow summer quash (about 1 lb.), thinly sliced
1/4 c. chopped onion
2 tbsp. water
2 tbsp. grated Parmesan cheese

1. Place squash, onion and water in 1 quart casserole, cover. Microwave at high (100%) until vegetables are tender, 7 to 9 minutes.

2. Sprinkle with Parmesan cheese. Microwave at high until cheese melts, 1 to 2 minutes. 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
