FRESH APPLE CAKE 
3 eggs
1 c. cooking oil
2 c. sugar
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla
3 c. fresh apples, finely chopped
1 c. chopped pecans
1 c. Angel Flake coconut (optional)

Blend by hand eggs, oil, and sugar. Stir flour, soda, salt, and cinnamon together. Add to above mixture. Stir in apples, pecans, coconut, and vanilla. Bake in a 10 inch tube pan at 350 degrees for 1 1/2 hour.

GLAZE FOR FRESH APPLE CAKE:

1 stick butter
1 c. sugar
1/2 c. buttermilk
1 tsp. baking soda
1 tsp. vanilla

Boil all ingredients for 2 minutes. Pour over hot cake while still in pan, and let it stand for 1 to 2 hours. Turn out onto a cake plate and cover.
