RAW APPLE - WALNUT CAKE 
3 eggs, beaten
2 c. sugar
1/2 c. oil
2 tsp. vanilla
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
4 c. diced apples (unpeeled)
1 c. chopped walnuts

Cream eggs, sugar, oil and vanilla. Then mix in other ingredients except apples and nuts. Add apples and nuts to mixture which will be very stiff. Spread mixture in a 9 x 13-inch pan, which has been greased and floured.

Bake for 50 minutes at 325°F. Cool and ice with frosting.

Frosting:

2 (3 oz.) pkg. cream cheese
5 tbsp. butter
1 1/4 c. powdered sugar
1/2 tsp. vanilla

Mix together cream cheese, butter, powdered sugar and vanilla.
