RHUBARB MUFFINS 
1 stick butter
1 c. sugar
1/4 tsp. vanilla
1 egg
2 c. flour
4 tsp. baking powder
1/4 tsp. salt
1 c. milk
2 c. diced rhubarb

Preheat at 400 degrees. Beat butter and sugar with mixer until smooth. Beat in vanilla, add egg and mix well. Sift flour, baking powder, and salt. Add half of flour to butter mixture and blend. Add 1/2 of the milk and blend. Add remaining flour and milk and mix. It will be lumpy. Fold in rhubarb, spoon into muffin cups, just below the top. Bake 30 minutes until toothpick comes out clean.
