PERFECT CORN BREAD 
1 c. sifted enriched flour
1/4 c. sugar
4 tsp. baking powder
3/4 tsp. salt
1 c. yellow corn meal
2 eggs
1 c. milk
1/4 c. soft shortening

Sift together flour, sugar, baking powder, and salt; stir in corn meal. Add eggs, milk and shortening. Beat with electric beater until just smooth, about 1 minute. Do not overbeat. Pour batter into greased 9x9x2 inch pan. Bake at 425 degrees 20 to 25 minutes. For a tasty variation, top batter with crumbled bacon before baking.
