THE P.'S PERFECT PUMPKIN BREAD 
3 1/2 c. flour
2 tsp. baking soda
1 1/2 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
2 c. sugar
1 c. vegetable oil
4 eggs
2/3 c. water
2 c. pumpkin

Sift dry ingredients together. Mix pumpkin, water, oil and eggs together. Pour into dry mixture and mix well. Pour into 2 greased 9 x 5 x 3 inch loaf pans. Bake in a preheated 350 degree oven for 1 hour and 15 minutes or until toothpick inserted in center comes out clean. Cool before removing from pans.

We make it this way for the holidays, but for other times we try to make it a little healthier by substituting whole wheat flour for part of the white flour; reducing the oil to 2/3 cup and by using 1 egg and 2 egg whites. We've also reduced the sugar. (The original recipe called for 3 cups of sugar!)
