POLLY-O VEGETABLE QUICHE 
9 inch deep dish unbaked pie shell
8 oz. pkg. Polly-O shredded Mozzarella cheese
10 oz. chopped spinach or broccoli
1/4 c. thinly sliced scallions
3 eggs
15 oz. container Polly-O Ricotta cheese
1/4 c. milk
2 tbsp. cornstarch
1 1/2 tsp. Italian seasonings
3/4 tsp. salt
1/4 tsp. pepper
1/2 tsp. garlic
2 tbsp. Polly-O grated cheese

Heat oven to 375 degrees F.

Sprinkle Mozzarella cheese, spinach and scallions on top of unbaked pie shell.

Combine eggs, Ricotta cheese, milk, cornstarch, Italian seasonings, salt, garlic and pepper. Beat well. Pour over cheese mixture in pie shell. Sprinkle grated cheese on top.

Bake 40 minutes (until knife inserted in center comes out clean). Let stand 10 minutes before serving.
