MINIATURE LUNCHEON MUFFINS 
1/3 c. butter, softened
1/3 c. sugar
1 egg
1 1/2 c. all-purpose flour
1 tbsp. baking powder
1/4 tsp. salt
1/2 c. milk

Cream butter; gradually add sugar, beating until light and fluffy. Add egg, and beat mixture until well blended.

Combine flour, baking powder, and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture.

Spoon batter into greased miniature muffin pans, filling 2/3 full. Bake at 400 degrees for 12 minutes or until lightly browned. Yield: 3 dozen.
