MOLASSES REFRIGERATOR MUFFINS 
1 1/2 c. butter
1 c. diced dates or raisins
4 eggs
1 c. buttermilk
4 c. flour
1 tsp. salt
1 c. sugar
1 c. molasses
2 tsp. baking soda
2 tsp. cinnamon

Saute dates or raisins in melted butter. Combine eggs, buttermilk, molasses and raisins or dates with butter. Stir in sugar, sift together dry ingredients. Stir into egg mixture until just blended.

Fill greased muffin tins 2/3 full. Bake at 350 degrees for 20 minutes. Dough mixture will keep in refrigerate several weeks, for fresh, warm muffins, anytime! Yield: about 36 muffins.
