PINEAPPLE DATE BREAD | |
2 c. flour 1 tbsp. baking powder 1/2 tsp. salt 3/4 c. sugar 1/4 c. shortening 3/4 c. crushed pineapple, drained 1 1/2 tsp. vanilla 2 eggs 1 c. dates, chopped 1 c. coconut 1/2 c. nuts, chopped Mix well (for 2 minutes) everything but fruit. Then fold in the fruit and nuts. Bake for 1 1/2 hours at 325 degrees. Makes 1 loaf. Thicken pineapple juice and spoon as sauce over bread for dessert. |
