MINNIE'S HOMEMADE CINNAMON
PINWHEELS
 
2 1/2 c. flour
1 heaping tbsp. sugar
2 tsp. baking powder
1/2 c. shortening
1 tsp. salt
1 pkg. dry yeast dissolved in 1/4 c. warm water
3/4 c. buttermilk

Combine dry ingredients. Cut in shortening until consistency of corn meal. Combine milk and yeast mixture and add to flour and shortening. Mix well together, kneading like biscuit dough. Roll out 1/4 inch thick. Sprinkle with mixture of: 1 tbsp. cinnamon 1/2 c. raisins 2 tbsp. chopped nuts 1/2 stick melted butter

Roll for jelly roll and slice. Bake at 400 degrees until golden brown. While baking, make frosting:

FROSTING:

1/2 box confectioners' sugar
1/2 tsp. vanilla
1/4 stick butter, melted

Enough milk to make mixture thin enough to spread. Combine and spread on warm rolls.

The Governor has the elected state officials for breakfast each month. Minnie's pinwheels seem to be a favorite with this group.
