COCONUT CUSTARD PIE | |
4 eggs 1/2 c. granulated sugar 1/4 tsp. salt 1 tsp. vanilla 2 1/2 c. scalded milk 1/2 to 1 c. flaked coconut (depending on taste) Scald milk while preparing remaining ingredients. Beat eggs slightly; stir in sugar, salt and vanilla. Gradually stir in milk. Add coconut. Pour into unbaked 9 inch pie shell. Bake in preheated oven (400 degrees) for 25 to 30 minutes or until a knife inserted half way comes out clean. Also makes a nice custard dessert. Fill approximately 6 small cup containers. |
