CHICKEN-FRIED ROUND STEAK 
1 1/2 to 2 lbs. round steak
2 eggs, beaten
2 tbsp. milk
1 c. fine cracker crumbs
1 c. shortening
Salt and pepper to taste

Cut steak into serving sized pieces, pounding with meat mallet to tenderize. Combine eggs with milk, mixing well. Dip steak in egg mixture. Coat with crumbs. Brown slowly on both sides in hot shortening in skillet. Season with salt and pepper. Cook tightly covered, over very low heat for 45 to 60 minutes or until tender.
