STUFFED PEPPERS | |
3/4 lb. extra lean ground beef or turkey 1 sm. onion, chopped 1 tomato, chopped 1 c. cooked rice 1 tsp. prepared horseradish 4 green peppers, seeds & pulp removed 1/4 c. shredded part skim Mozzarella cheese Mix together beef or turkey, onion, tomato, rice and horseradish. Fill green peppers with meat mixture. Place peppers on roasting rack or tray. Cover with waxed paper. Microwave on high for 13 to 18 minutes or until meat is no longer pink and peppers are tender, rearranging after half the cooking time. Top each with 1 tablespoon Mozzarella cheese; microwave 1 or 2 minutes until cheese melts. Yield: 4 servings. Serving size: 1 stuffed pepper. Per serving: 264 calories, 20 grams carbohydrate, 20 grams protein, 11 gram fat, 82 milligrams sodium. Exchanges per serving: 1 starch, 1 vegetable, 2 medium fat meat. |
