EASY STUFFED PEPPERS 
1 1/2 lbs lean ground turkey
2 cups brown rice
1/2 jar spaghetti sauce of your choosing
6 medium sized bell peppers, tops and seeds removed
shredded cheese (optional)
Garlic powder (optional)

Preheat oven to 400°F.

Remove tops and seeds from peppers and discard. place peppers in large pot and boil until peppers float. While peppers are boiling, cook rice. Brown turkey in separate frying pan, also while peppers are boiling, drain. After turkey is browned, remove from heat and add rice and sauce, stirring together. Add in garlic powder if desired.

Fill peppers with rice/meat mixture.

Bake at 400°F for approxinamtely 35 minutes, or until peppers begin to brown. Sprinkle sheredded cheese if desired over peppers and remove from oven.

Serve with salad and Texas toast. Delcious and nutritious, packed with fiber and low in fat and cholesterol.
