LEMON THYME CHICKEN | |
6 chicken breasts, halved 1 med. onion 1 can chicken broth 2 tbsp. lemon juice 1/2 tsp. thyme, crushed Lemon pepper 1 tbsp. flour Roll chicken breasts in flour and lemon pepper. Brown in peanut oil, then set aside from browning pan. Saute onions in butter. Make mixture of flour left from rolling chicken breasts, about 1 tablespoon. Then add lemon juice and chicken broth. Return chicken breasts to sauce and simmer for 10 minutes over very low heat, on top of stove. Turn chicken in sauce and sauteed onions. Sprinkle thyme over chicken as it is simmering. |
