SPINACH PIE 
2 (10 oz.) boxes frozen chopped spinach (thaw and drain, squeeze out all liquid
1 (7 1/2 oz.) pkg. farmer cheese
2 eggs
1 tsp. Matzo meal or 1 sm. mashed potato
Romano grated cheese
Phillo dough

Thaw and squeeze spinach, set aside, put Farmer cheese in mixing bowl lay out same amount of Romano cheese, mix together, add 2 eggs, add Matzo meal or potato and spinach, mix together. Oil a pie pan (Pyrex works best). Layer Phillo dough, 3 sheets, then oil and add about 3 more sheets, put in spinach filling top with strips of dough. Dot with oil on top. Bake in 400 degree oven about 20 minutes or until golden brown. Makes 2 pies.
