CHINESE CHICKEN SALAD 
1 head of lettuce, sm.
1 tbsp. lite salad oil
1 tbsp. dry mustard
2 tbsp. sesame seeds
1 c. cooked white chicken or turkey

Tear or shred lettuce into a salad bowl. Pour 1 tablespoon of diet salad oil over the lettuce and toss until coated lightly. Add sesame seeds which have been dry toasted in a non-stick skillet until brown. Add cooked white chicken or turkey meat, shredded or diced. Add dry mustard and toss until all ingredients are coated lightly. Serve immediately with a garnish or fresh fruit or fruit cup and crackers.
