CHICKEN BREASTS DIJON 
2 whole chicken breasts (about 2 lb.) halved & skinned
2 tbsp. Dijon or spicy brown mustard
1 tsp. lemon juice
1/4 tsp. pepper
2 green onions, chopped fine
1/2 c. soft white bread crumbs (1 slice)

Preheat the broiler and lightly grease the rack. Broil the breasts 5-6 inches from the heat, 5 minutes each side. Combine the mustard, lemon juice, pepper and onions. Coat the broiled chicken all over with the mixture; place them back on the rack and sprinkle lightly with half of the crumbs. Broil 2 minutes, until crumbs are brown. Turn the breasts, sprinkle with remaining crumbs and brown about 2 minutes more.
