CHICAGO HOT RELISH 
8 lb. ripe tomatoes, don't peel, chop and drain 1/2 day
2 c. chopped celery
6 big onions, chopped
6 red and 6 green mangoes, chopped
2 tbsp. mustard seed
2 tbsp. cinnamon
2 tbsp. sugar
1/2 c. salt
1 qt. vinegar (scant)

Mix cold. DON'T COOK. Add hot peppers if you like. Don't seal. Refrigerate. Makes 1 1/2 gallon.

Excellent in BBQ, goulash, cheese balls, potato salad about anything mixed up or hamburgers, along side any meat.
