IRISH LAMB STEW 
1 - 1 1/2 lbs. lamb, cut in 1 1/2 inch chunks
4 potatoes, cut in lg. chunks
4 carrots
1 onion, sliced
1 rib celery
2 c. beef broth
Salt, pepper, bay leaf, parsley, pinch thyme

Defat meat completely. Layer meat, potatoes and onion. Pour broth over all. Add celery and seasonings. Bring to boil. Simmer 1 hour. Add carrots. Simmer 1/2 hour more. Enjoy with crusty bread.
