BANANA SALAD 
Romaine lettuce or green leaf lettuce
1 - 2 bananas
peanuts, chopped

Tear lettuce into bite size pieces, place in the bowl you plan to serve the salad. Top with desired amount of bananas and ladle a couple of scoops of dressing to top. Sprinkle the chopped peanuts over the top. Let sit about 30 minutes in the refrigerator before you serve.

Off Your Rocker Dressing:

3 c. mayonnaise
1 c. sugar
2 1/2 tbsp. apple cider vinegar

Whisk all three ingredients together in bowl. This dressing is best when made a day ahead. Do not worry if the dressing is very thick because it is supposed to be like that. Covered and refrigerated, it should last a couple of weeks.
