THAI SHRIMP SALAD 
3 c. water
1 lb. fresh or frozen shrimp
2 tbsp. sliced red green onion
1 tbsp. fine lemon peel
3/4 tsp. chopped red chili pepper
1 clove garlic, minced
1 tbsp. lemon or lime juice
1 tbsp. fish sauce
2 tsp. oil
Lettuce

In saucepan bring water to boil. Add shrimp, simmer 2-3 minutes or until shrimp turns pink. Drain, shell and devein.

In bowl combine green onion, lemon peel, chili pepper, garlic, lemon or lime juice, fish sauce and oil. Mix well. Add shrimp; toss to coat well. Cover and chill. Toss again before serving. Serve on lettuce leaves. Makes 3-4 servings.
